Super Moist Carrot & Pineapple Cake

Ingredients
1 1/2 cups self raising flour
1 cup brown sugar
1/2 tsp bicarb soda
1 tsp cinnamon
2/3 cup canola oil
2 eggs
1 cup grated carrot
1/2 cup crushed pineapple
1 tsp vanilla essence
Pinch of salt


Method
1. Preheat oven to 180c
2. Grease loaf tin and line base with greaseproof paper
3. Place flour, sugar, soda, salt and cinnamon in a bowl and mix well
4. Add remaining ingredients and mix well
5. Pour into prepared cake tin and bake until skewer inserted in the centre comes out clean (approx 35-40 mins)
6. Cool for 10 mins in the tin, then turn out onto rack to cool
8. Ice with cream cheese frosting or eat on it's own
